Introduction: Sweet Potato Pancakes Made in Protein Blender

This method is great for single and two-people households. I have all available gadgets, mixers, blenders and so on, but sometimes you just want to cook something with minimum fuss and clean up and that's when electric protein blender comes out. I use it for smoothies and protein shakes, daiquiris, sauces, small batches of soup and so on. It's also great for pancake batter because it leaves it smooth and lump free.

Step 1: INGREDIENTS

FOR 2 SERVINGS:

  • 1/2 CUP COOKED SWEET POTATO
  • 1 CUP MILK (REGULAR OR VEGAN)
  • 1 SMALL EGG
  • 2 TBS HONEY (OR MAPLE SYRUP)
  • PINCH OF SALT, 1 TSP CINNAMON
  • 2/3 - 1 CUP FLOUR
  • 2 TSP BAKING POWDER

*You can leave the potato out if it's not your cup of tea; it's a great way to use any leftovers and make breakfast more filling, but you can just make regular pancakes.

Step 2: BLENDING

1. Blend milk, sweet potato, egg and honey first.

2. Add salt, cinnamon and flour mixed with baking powder. Add 2/3 cup of flour first and if batter is not thick enough, add a little bit more. It all depends on the moisture content of the potatoes.

Step 3: FRYING

Screw the drinking lid on the shaker, it will help with pouring the pancake batter.

Fry on medium heat, use cooking spray or regular oil, or none at all if you have a non stick frying pan.

Flip the pancakes once bubbles start forming on the surface of the batter.

Step 4: PLATING

Stack them up, drizzle some honey or maple syrup and serve with berries.
